The tofu really ended up shining through here. Crunchy on the outside, soft on the inside, and incredibly aromatic. With all the fresh ingredients along with it, this sandwich was a burst of flavor all the way through.

Soy curls are a secret weapon in your cooking arsenal. They soak up the flavor of whatever you throw at it and are a healthy, whole food with a decent amount of protein. Love using these in a stir fry, or for a mock chicken gyro. Super versatile in the kitchen.

The only issue I have with this recipe is that I end up abandoning everything else and just eating the crispy, sauced up soy curls directly. Easy to prep and the best way I know to make soy curls with an asian flair.

This option from Miyoko's is incredibly flavorful, but we definitely used it in the wrong context. Thought it was a spread but as mentioned in the product description it's likely better in a hot savory dish. Would love to try this again in a pasta dish!
